RECIPE

Lemon cupcakes
yields about 24 cupcakes

240ml - 1 cup buttermilk (divided and at room temperature)
2 eggs
1 egg yolk (at room temperature)
0.25 tsp vanilla extract
250g - 1.25 cups sugar
230g - 1. 75 cups cake flour (sifted 3 times)
1.5 tsp baking powder
0.5 tsp baking soda
0.25 tsp salt
115g - 0.5 cup unsalted butter (softened)
zest of 2 lemons (finely grated)

Preheat oven to 175°C - 350°F - Gas Mark 4.
In a medium bowl, combine the egg yolk, egg, 60ml (0.25 cup) buttermilk and vanilla. Mix well and set aside.
In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Mix on low speed for 30 seconds.
Add the butter and mix at low speed for 30 seconds.
Add the rest of the buttermilk and mix on low speed until just moistened, then increase to medium speed for 90 seconds.
Add the egg yolk/buttermilk/vanilla/egg mix in three separate batches. Beat on medium speed for 20 seconds between each addition.
Fold in the zest and disperse until evenly distributed.
Pour the mixture into muffin cases, fill up to 2/3rd.
Bake for 15 minutes or until a skewer inserted in the center comes out clean.
Transfer to a wire rack to cool completely.
