RECIPE

Buttercream frosting
yields enough to frost about 24 cupcakes

5 egg whites
250g - 1.25 cup sugar
340g - 1. 5 cups unsalted butter (cool and cut into cubes)
2.5 tbsp vanilla extract
pinch of salt

Wipe the bowl of an electric mixer with a paper towel and lemon juice.
Add the egg whites and sugar and place over a saucepan of simmering water. Be careful not to let the base of the bowl touch the water.
Whisk constantly but gently until temperature reaches 71°C - 160°F or until the sugar has completely dissolved and the egg whites are hot.
Remove from heat and whip the mixture until it is thick, glossy and the bottom of the bowl feels neutral to the touch (10 minutes or so).
Add the butter cubes, one at a time and mix on low speed until incorporated and the frosting has turned silky and smooth in texture.
Add vanilla and salt, and continue to beat on low speed until well combined.
Add a touch of food colouring or flavour if desired, following the instructions on the box. Blend until evenly incorporated.
Frost your cooled cake or cupcakes.
