Chocolate chip muffins
yields about 24 muffins
240g - 2 cups flour
75g - 0.75 cup unsweetened cocoa powder
4 tsp baking powder
400g - 2 cups sugar
4 eggs
0.5 tsp vanilla extract
315ml - 1.3 cups whole milk
300g - 1.3 cups unsalted butter (melted)
225g - 1.25 cup chocolate (roughly chopped)
Preheat oven to 175°C - 350°F - Gas Mark 4.
In a medium bowl, sift in the flour, cocoa powder and baking powder.
Add the sugar, vanilla and eggs, and beat until thoroughly mixed and pale.
In a big bowl, pour the flour mixture and the milk, alternating between each. Mix until just incorporated after each addition. Finish with the flour mixture.
Stir in the butter and mix until well incorporated.
Fold in the chocolate and mix in gently until evenly dispersed.
Pour the mixture into muffin cases, fill up to 2/3rd.
Bake for 15 to 17 minutes or until a skewer inserted in the center comes out clean.
Transfer to a wire rack to cool completely.
