RECIPE

Carrot cake
yields about 12 to 16 slices

300g - 2.5 cups flour
1.5 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
zest of half an orange
300g - 1.5 cups soft brown sugar
225g - 1 cup unsalted butter (at room temperature)
4 eggs
150ml - 0.6 cup whole milk
450g - 5 cups carrots (grated)
100g - 1 cup pecan nuts (roughly chopped)

Preheat oven to 180°C - 350°F - Gas Mark 4.
In a medium bowl, combine the flour, baking powder, baking soda, cinnamon and ginger.
Mix in the orange zest.
In a large bowl cream the sugar and butter, until smooth and fluffy. Beat in the eggs.
Add a third of the flour mixture, beating until just mixed. Mix in half the milk, until just mixed. Repeat additions, ending with the flour.
Stir in the carrots and pecans, until evenly dispersed.
Pour the batter into a buttered and dusted cake tin.
Bake for 30 to 35 minutes or until a skewer inserted in the center comes out clean.
