yields 12 rolls
360ml - 1.5 cups whole milk (warm)
3 tsp dry yeast
110g - 0.5 cups unsalted butter (melted and at room temperature)
100g - 0.5 cups white sugar
2 eggs (at room temperature)
2 tsp salt
850g - 7 cups flour
170g - 1 cup brown sugar
4 Tbsp cinnamon
110g - 0.5 cups unsalted butter (softened)
In a large bowl, place the milk and yeast. Let it dissolve.
Mix in the melted butter, white sugar, eggs and salt to the water mixture.
Add the flour in increments and knead until the dough is smooth and still a little bit tacky (about 15 minutes)
Cover with a clean tea towel and let rise in a warm place for about 1 hour or until doubled in size.
Roll out the dough on a lightly floured surface, until it reaches about 40x55cm - 16x21in and 0.75cm - 0.5in thick.
Combine the brown sugar and cinnamon in a medium bowl.
Spread the softened butter on, then sprinkle the sugar and cinnamon mix over the rolled out dough.
Roll into a tight roll and cut into 12 equal rolls.
Place the rolls on a baking tray lined with baking paper, cover and proof for 30 minutes.
Once ready, preheat your oven to 205°C - 400°F - Gas Mark 6
Bake for about 17 minutes or until they turn golden brown.
