Banana loaf
yields about 12 to 16 slices
265g - 1.75 cups brown sugar
2 eggs
300g - 1.5 cups bananas (mashed)
130g - 1 cup flour
1 tsp baking powder
1 tsp baking soda
1 tsp baking dried ginger
1 tsp cinnamon
170g - 0.6 cup unsalted butter (melted)
200g - 1 cup dark chocolate (roughly chopped) (optional)
Preheat oven to 170°C - 325°F - Gas Mark 3
In a large bowl, beat the brown sugar and eggs until well incorporated.
Add the mashed bananas.
Mix in the flour, baking soda, baking powder, ginger and cinnamon until well incorporated.
Pour in the melted butter and beat until well mixed.
Add the chocolate.
Pour the batter into a buttered and dusted loaf tin.
Bake for 1 hour or until firm to touch and a skewer inserted in the center comes out clean.
Transfer to a wire rack to cool completely.
