RECIPE

Peanut Butter Cookies
yields about 24 cookies

200g - 1 cup white sugar
165g - 1 cup brown sugar
225g - 1 cup unsalted butter
2 eggs
125g - 1 cup peanut butter
0.5 tsp vanilla extract
340g - 2.75 cups flour
2.5 tsp baking soda
0.5 tsp salt
100g - 0.55 cups chocolate (roughly chopped)

In a large bowl, cream the sugars and butter until smooth and fluffy.
Add the eggs, one at a time. Mix well after each addition.
Beat in the peanut butter and vanilla extract.
Sift in the flour, baking soda and salt. Mix with an electric mixer until smooth.
Fold the chocolate and mix until evenly distributed.
Cover the dough with plastic wrap and place in the refrigerator for 4 to 6 hours.
Preheat oven to 175°C - 350°F - Gas Mark 4.
Scoop six 85g - 3oz balls of cookie dough at a time on a baking tray lined with baking paper.
Bake for 15 minutes or until golden brown but still soft.
Transfer to a wire rack and let cool for 10 minutes.
