Apple and cinnamon muffins
yields about 24 muffins

240ml - 1 cup milk
225g - 1 cup unsalted butter (cut into cubes)
4 eggs
1 tsp vanilla extract
225g - 1.25 cups brown sugar
450g - 3.5 cups flour (sifted)
4 tsp baking powder
2.5 tsp cinnamon
6 apples (cut into cubes)

Preheat oven to 175°C - 350°F - Gas Mark 4.
In a big bowl, beat the milk, butter, eggs and vanilla extract, until thoroughly mixed and pale.
Add the sugar, flour, baking powder and cinnamon. Mix until just incorporated.
Fold in the apples and mix in gently until evenly dispersed.
Pour the mixture into muffin cases, fill up to 2/3rd.
Bake for 25 to 30 minutes or until a skewer inserted in the center comes out clean.
Transfer to a wire rack to cool completely.
