RECIPE

Blueberry muffins
yields about 24 muffins

240g - 1.25 cups brown sugar
170g - 0.75 cup unsalted butter (softened)
3 eggs
440g - 1.75 cups plain yoghurt
1.5 tsp lemon zest
450g - 3.5 cups flour (sifted)
4 tsp baking powder
0.75 tsp baking soda
0.75 tsp salt
250g - 1.6 cups blueberries

Preheat oven to 175°C - 350°F - Gas Mark 4.
In a big bowl, beat the butter and sugar until light and fluffy.
Add the eggs one at a time, and beat until well incorporated.
Add the yoghurt and zest, and mix until well incorporated.
Sift in the flour, baking powder, baking soda and salt in three separate batches. Mix until just combined.
Fold in the blueberries and mix in gently until evenly dispersed.
Pour the mixture into muffin cases, fill up to 2/3rd.
Bake for 25 to 30 minutes or until a skewer inserted in the center comes out clean.
Transfer to a wire rack to cool completely.
