Paleo Apple Cake
yields about 12 to 16 slices
100g - 0.5 cup coconut oil (melted)
65g - 0.5 cup coconut sugar
2 eggs
250g - 2.5 cups almond flour
60g - 0.5 cup coconut flour
1.5 tsp cinnamon
1 tsp baking soda
0.5 tsp salt
1 tsp vanilla extract
450g - 3.3 cups apples (grated)
50g - 0.5 cup walnuts (roughly chopped)
Preheat oven to 165°C - 325°F - Gas Mark 3.
In a medium bowl, combine the flours, cinnamon baking soda and salt. Set aside.
In a large bowl, whisk the coconut oil and coconut sugar. Add the eggs and beat well.
Add the dry ingredients to the egg mixture and gently stir with a spatula.
Carefully and using a rubber spatula, mix in the dry ingredients into the wet ingredients. Be careful not to over mix.
Add the vanilla extract, apples and walnuts. Combine until evenly distributed.
Pour the batter into a greased cake tin.
Bake for 45 minutes to 1 hour or until a skewer inserted in the center comes out clean.
Transfer to a wire rack to cool.
