tea towel with baking recipe

Focaccia bread
yields 2 breads
750ml - 3.25 cups water (at room temperature)
35g - 1 oz active yeast
1.25 tsp sugar
1.25kg - 10.3 cups bread flour
3.5 tsp salt
65ml - 0.25 cup olive oil
In a medium bowl, place the water. Add the sugar and yeast and let it dissolve.
In a large bowl, combine the flour, salt and olive oil. Add the yeast mixture and knead until the dough becomes smooth and soft, about 10 minutes.
Transfer to a clean, lightly floured surface and knead for another minute.
Coat the inside of your large bowl lightly with olive oil and return the dough to the bowl. Cover with a clean tea towel and let the dough rise until it has doubled its size, at least an hour.
Once it has risen, preheat oven to 220°C - 425°F - Gas Mark 7
Coat 2 sheet pans with olive oil. Divide the dough in half and place on each pan. Roll out dough to about 2cm - 0.75 inch thick. Generously brush the tops with olive oil. Cover with tea towels and proof for another 30 minutes.
Once ready, with your fingers, press dimples into the dough at approximately 8cm - 3 inch intervals and sprinkle with coarse sea salt.
Bake for about 25 to 30 minutes and the top of the loaves are golden brown.
