Browned butter cupcakes
yields about 24 cupcakes
225g - 1 cup unsalted butter
300g - 2.5 cups flour
2.5 tsp baking powder
0.5 tsp salt
400g - 2 cups sugar
4 eggs
240ml - 1 cup milk (warm)
1.5 tsp vanilla extract
Preheat oven to 175°C - 350°F - Gas Mark 4.
Place the butter in a small pot and and melt over medium heat. Continue cooking, stirring constantly until the butter has taken on a brown hue and smells nutty.
Remove from the heat and allow to cool to room temperature.
Sift the flour, baking powder and salt into a medium bowl and set aside.
Beat the sugar and eggs in a large bowl.
Add the milk, browned butter and vanilla to the sugar mix. Stir until combined.
Add half the flour mix, and beat until just combined. Repeat with the other half.
Pour the mixture into muffin cases, fill up to 2/3rd.
Bake for 18 to 22 minutes or until tops turn golden brown and a skewer inserted in the center comes out clean.
Transfer to a wire rack to cool completely after 5 minutes.
