Chocolate cupcakes
yields about 24 cupcakes
200g - 1 cup dark chocolate (roughly chopped)
350g - 1.5 cups unsalted butter (cut into cubes)
450g - 2 cups caster sugar
4 eggs
200g - 1.3 cups self rising flour
35g - 0.25 cup unsweetened cocoa powder
pinch salt
Preheat oven to 175°C - 350°F - Gas Mark 4.
Place the chocolate and butter in a heatproof bowl over a saucepan of simmering water. Be careful not to let the base of the bowl touch the water.
Heat until melted and smooth.
Remove from the heat and stir in the sugar.
Let cool for 10 minutes, then beat with an electric mixer for 3 minutes.
Add the eggs one at a time, beating for 30 seconds between each addition.
Sift in the flour, cocoa powder and salt, then mix until blended.
Pour the mixture into muffin cases, fill up to 2/3rd.
Bake for 15 minutes or until a skewer inserted in the center comes out clean.
Transfer to a wire rack to cool completely.
