Vanilla cake
yields about 12 to 16 slices
5 egg whites
235ml - 1 cup whole milk (divided)
2 tsp vanilla extract
1 egg
350g - 2.6 cups cake flour (sifted)
400g - 2 cups sugar
3 tsp baking powder
0.75 tsp salt
170g - 0.75 cup unsalted butter (cut into cubes and kept cold)
Preheat oven to 180°C - 350°F - Gas Mark 4
In a medium bowl, combine the egg whites, 60ml (0.25 cup) milk, vanilla and egg. Mix well and set aside.
In a large bowl, combine the flour, sugar, baking powder and salt.
Add the butter cubes, one at a time. Mix with an electric mixer at low speed, until the mixture is a fine crumbly texture.
Add the rest of the milk and mix on low speed for 5 minutes.
Add the egg whites/milk/vanilla/egg mix in three separate batches. Beat with an electric mixer at medium speed until the mixture becomes light and fluffy.
Pour the batter into a buttered and dusted cake tin.
Bake for 25 to 35 minutes or until a skewer inserted in the center comes out clean. Be careful not to over bake.
Transfer to a wire rack to cool completely after 10 minutes.
