Vanilla cupcakes
yields about 24 cupcakes
160g - 1.25 cups flour
190g - 1.5 cups self rising flour
225g - 1 cup unsalted butter
400g - 2 cups sugar
4 eggs
240ml - 1 cup milk
1 tsp vanilla extract
Preheat oven to 175°C - 350°F - Gas Mark 4.
Sift the flours, baking soda, baking powder and salt into a medium bowl and set aside.
In a big bowl, cream the butter until smooth and fluffy.
Add the sugar gradually, while beating with a mixer until fluffy (about 3 minutes)
Add the eggs one at a time, beat well after each addition.
Add a third of the flours/baking soda/baking powder/salt mixture, then a third of the milk. Repeat 3 times. Mix until well incorporated.
Pour the mixture into muffin cases, fill up to 2/3rd.
Bake for 18 minutes or until top turns golden brown and a skewer inserted in the center comes out clean.
Transfer to a wire rack to cool completely after 15 minutes.
